Ingredients

Venison Chili:

  • 2 lbs ground venison
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 large carrots, diced
  • 1 red bell pepper, diced
  • 2 cans (14.5 oz each) diced tomatoes
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Jalapeno Cornbread:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 2 jalapenos, seeded and finely chopped

Directions

Venison Chili:

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sautéing until translucent.
  2. Add ground venison to the pot, breaking it apart with a spoon. Cook until browned.
  3. Mix in carrots and bell pepper, cooking for 5 minutes until slightly softened.
  4. Stir in diced tomatoes, kidney beans, tomato paste, beef broth, chili powder, cumin, smoked paprika, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and simmer uncovered for 1.5 hours, stirring occasionally.

Jalapeno Cornbread:

  1. Preheat oven to 400°F (200°C). Grease an 8-inch square baking dish.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, melted butter, and egg.
  4. Add the wet ingredients to the dry ingredients, stirring until just combined. Fold in chopped jalapenos.
  5. Pour the batter into the prepared baking dish. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
