Ingredients

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 bell peppers, diced (preferably one red and one green)
  • 2 large carrots, diced
  • 1 zucchini, diced
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 2 cans (15 oz each) diced tomatoes, with juice
  • 1 can (15 oz) tomato sauce
  • 2 tbsp tomato paste
  • 1 cup vegetable broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (adjust to taste for spiciness)
  • 1/2 tsp ground black pepper
  • Salt to taste
  • Optional garnishes: fresh cilantro, avocado slices, shredded cheese, sour cream

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until the onion becomes translucent, about 5 minutes.
  2. Add the bell peppers, carrots, and zucchini to the pot. Cook, stirring occasionally, until the vegetables are tender, about 10 minutes.
  3. Stir in the black beans, diced tomatoes with their juice, tomato sauce, tomato paste, and vegetable broth. Bring the mixture to a simmer.
  4. Season the chili with chili powder, cumin, paprika, cayenne pepper, ground black pepper, and salt. Stir well to combine all the ingredients.
  5. Reduce the heat to low and let the chili simmer, uncovered, for 45 minutes. Stir occasionally. The chili should thicken and the flavors will meld together beautifully.
