  • 2 cans (14.5 oz each) diced tomatoes, undrained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro and grated cheddar cheese for garnish (optional)

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Add the ground beef (or turkey) to the pot. Cook until browned, breaking it apart with a spoon, about 8 minutes.
  4. Mix in the diced zucchini and bell pepper. Cook for 5 minutes, or until they start to soften.
  5. Pour in the diced tomatoes, black beans, kidney beans, and tomato paste. Stir well.
  6. Season the mixture with chili powder, ground cumin, smoked paprika, salt, and pepper. Bring to a boil.
  7. Reduce the heat and let it simmer uncovered for 25-30 minutes, stirring occasionally, until the chili thickens and the flavors meld together.
  8. Taste and adjust the seasoning if needed.
