Ingredients
- 2 cups of sushi rice
- 4 cups of water
- 2 tablespoons of Shoyu (soy sauce)
- 1 tablespoon of Mirin (sweet rice wine)
- 1 teaspoon of sugar
- 1 tablespoon of sesame oil
- 4 boneless, skinless chicken thighs
- 1 cup of sliced carrots
- 1 cup of sliced bell peppers
- 1 cup of broccoli florets
- 2 teaspoons of sesame seeds
- Salt and pepper to taste
- Fresh cilantro for garnish
Directions
- Prepare the Rice:
- Rinse the sushi rice under cold water until the water runs clear.
- In a medium pot, combine the rinsed rice and water. Bring to a boil, then reduce to a simmer, cover, and cook for 18 minutes.
- Remove from heat and let it stand, covered, for 10 minutes.
- Prepare the Shoyu Sauce:
- In a small bowl, whisk together Shoyu, Mirin, sugar, and sesame oil. Set aside.
- Cook the Chicken:
- Season chicken thighs with salt and pepper.
- In a large skillet, heat a tablespoon of sesame oil over medium-high heat.
- Add chicken thighs and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
- Sauté the Vegetables:
- In the same skillet, add carrots, bell peppers, and broccoli.
- Sauté until vegetables are tender, about 5-6 minutes.
- Slice the cooked chicken and return it to the skillet with the vegetables.
- Combine and Serve:
- Pour the Shoyu sauce over the chicken and vegetables, stirring to combine.
- Sprinkle sesame seeds over the dish and garnish with fresh cilantro.
- Serve hot over the prepared sushi rice.
