Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 pounds ground beef
- 1 tablespoon tomato paste
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 can (14 oz) diced tomatoes, no added sugar
- 1 can (14 oz) beef broth, low sodium
- Salt and pepper, to taste
- Optional: shredded cheddar cheese and sour cream for garnish
Directions
- Set the Instant Pot to ‘Sauté’ mode. Heat the olive oil and sauté the onion and garlic until fragrant, about 3 minutes.
- Add the bell pepper and ground beef. Cook until the beef is browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the tomato paste, chili powder, cumin, smoked paprika, and cayenne pepper. Cook for an additional minute to release the flavors.
- Add the diced tomatoes and beef broth. Season with salt and pepper to taste.
- Close the lid of the Instant Pot and set it to ‘Manual’ or ‘Pressure Cook’ mode. Set the timer for 20 minutes on high pressure.
- Once cooked, let the pressure release naturally for 10 minutes, then use the quick release method to release any remaining pressure.
- Serve hot. Garnish with shredded cheddar cheese and sour cream if desired.
