  • 1 bell pepper, diced
  • 2 pounds ground beef
  • 1 tablespoon tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 can (14 oz) diced tomatoes, no added sugar
  • 1 can (14 oz) beef broth, low sodium
  • Salt and pepper, to taste
  • Optional: shredded cheddar cheese and sour cream for garnish

Directions

  1. Set the Instant Pot to ‘Sauté’ mode. Heat the olive oil and sauté the onion and garlic until fragrant, about 3 minutes.
  2. Add the bell pepper and ground beef. Cook until the beef is browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the tomato paste, chili powder, cumin, smoked paprika, and cayenne pepper. Cook for an additional minute to release the flavors.
  4. Add the diced tomatoes and beef broth. Season with salt and pepper to taste.
  5. Close the lid of the Instant Pot and set it to ‘Manual’ or ‘Pressure Cook’ mode. Set the timer for 20 minutes on high pressure.
  6. Once cooked, let the pressure release naturally for 10 minutes, then use the quick release method to release any remaining pressure.
  7. Serve hot. Garnish with shredded cheddar cheese and sour cream if desired.
