Directions

  1. Prepare Vegetables: Peel and cube the butternut squash. Dice the onion and red bell pepper, and mince the garlic.
  2. Brown the Beef: In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, about 5-7 minutes. Remove the beef and set aside, leaving the drippings in the pot.
  3. Sauté Vegetables: In the same pot, add the onion, bell pepper, and garlic. Sauté until softened, about 5 minutes.
  4. Combine Ingredients: Return the beef to the pot. Add the cubed butternut squash, diced tomatoes, kidney beans, beef broth, chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper.
