  • 1 medium spaghetti squash (about 2-3 lbs)
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1 lb lean ground beef
  • 2 tablespoons tomato paste
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ground cloves
  • Salt and pepper to taste
  • Shredded cheddar cheese (for garnish)

  • Kidney beans, cooked (optional for garnish)

Directions

  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the inside with olive oil and season with salt and pepper. Place cut-side down on a baking sheet and roast for 40 minutes or until tender.
  2. While the squash is roasting, heat a large skillet over medium heat. Add chopped onions and garlic, sautéing until translucent, about 3-5 minutes.
  3. Add the ground beef to the skillet. Cook, breaking it apart with a spoon, until browned and cooked through.
  4. Stir in tomato paste, diced tomatoes, beef broth, chili powder, cumin, cinnamon, allspice, and cloves. Bring to a simmer and cook for 20 minutes, stirring occasionally. Season with salt and pepper to taste.
  5. Once the squash is cooked and cool enough to handle, use a fork to scrape the flesh into spaghetti-like strands.
