Ingredients

  • 2 tbsp olive oil

  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 lb ground beef
  • 2 tbsp tomato paste
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper, to taste
  • 1 cup beef broth
  • Fresh cilantro, chopped (for garnish)

Directions

  1. Preparation: In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the onions are translucent, about 5 minutes.
  2. Cook the Beef: Increase the heat to medium-high. Add the ground beef to the pot. Cook, breaking it apart with a spoon, until browned, about 8 minutes.
  3. Add Flavors: Stir in the tomato paste, diced tomatoes, kidney beans, chili powder, cumin, paprika, oregano, salt, and pepper. Mix well to combine.
  4. Simmer: Pour in the beef broth and bring the mixture to a simmer. Reduce the heat to low and let it simmer, uncovered, for 45 minutes, stirring occasionally.
  5. Serve: Check the seasoning and adjust if necessary. Serve hot, garnished with chopped cilantro and, if desired, shredded cheddar cheese.
