Directions

  1. Prepare the Pork Chops: Start by creating a pocket in each pork chop. Carefully make a horizontal cut in the side of each pork chop, slicing almost to the bone, but leaving the sides intact to form a pocket.
  2. Make the Stuffing: In a mixing bowl, combine breadcrumbs, Parmesan cheese, garlic, parsley, cranberries, walnuts, and melted butter. Season with salt and pepper, and mix until well combined.
  3. Stuff the Pork Chops: Spoon the stuffing mixture into each pork chop pocket. Secure the opening with toothpicks to keep the stuffing inside while cooking.
  4. Season: Brush each stuffed pork chop with olive oil and season both sides with salt and pepper.
