  • 2 lbs of beef chuck, cut into 1/2-inch cubes
  • 1/4 cup of vegetable oil
  • 1 large onion, finely chopped
  • 5 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 3 tbsp of chili powder
  • 1 tbsp of ground cumin
  • 1 tbsp of smoked paprika
  • 1 tsp of dried oregano
  • 1/2 tsp of cayenne pepper (adjust to taste)
  • 1 can (14 oz) of diced tomatoes
  • 1 can (14 oz) of beef broth
  • 1 tbsp of tomato paste
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Shredded cheddar cheese (for garnish)


  1. Heat the oil in a large pot over medium-high heat. Add the beef cubes and cook until browned on all sides. Remove the beef and set aside.
  2. In the same pot, add the onion, garlic, and red bell pepper. Cook until the vegetables are soft, about 5 minutes.
  3. Return the beef to the pot. Stir in the chili powder, cumin, smoked paprika, oregano, and cayenne pepper. Cook for about 2 minutes to release the flavors.
  4. Pour in the diced tomatoes (with juice), beef broth, and add the tomato paste. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped cilantro and shredded cheddar cheese.
