Directions

  1. Preheat & Prepare: Preheat your oven to 375°F (190°C). Season the chicken thighs with salt and pepper on both sides.
  2. Sear the Chicken: In a large oven-proof skillet, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down and cook until the skin is golden and crispy, about 5 minutes. Flip the thighs and cook for an additional 3 minutes.
  3. Bake: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 75°C).
  4. Make the Sauce: While baking the chicken, pour out excess fat from the skillet, leaving about 1 tablespoon. Add garlic to the skillet and sauté over medium heat until fragrant, about 1 minute. Stir in the chicken broth, scraping any browned bits off the bottom of the skillet. Whisk in the mustard and heavy cream. Add thyme. Let the sauce simmer until it thickens slightly, about 5-7 minutes.
