Serving Size
- Serves 4 people
Ingredients
- 4 large chicken thighs (skin on, bone-in)
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 cup of your favorite beer (lager or ale)
- 1 cup chicken broth
- 2 carrots, peeled and sliced
- 2 sprigs of fresh thyme
- 2 tablespoons chopped fresh parsley (for garnish)
Directions
- Prep the Chicken: Season the chicken thighs generously with salt and pepper.
- Brown the Chicken: In a large, heavy-bottomed skillet, heat the olive oil over medium-high heat. Add the chicken, skin-side down, and cook until golden brown (about 5 minutes per side). Remove the chicken and set aside.
- Sauté the Vegetables: In the same skillet, add the onion and carrots. Cook until the onions are translucent (about 3 minutes). Add the garlic and cook for another minute.
- Deglaze: Pour in the beer and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Allow it to simmer and reduce slightly (about 3 minutes).
- Braise: Return the chicken to the skillet. Add the chicken broth and thyme sprigs. Bring to a simmer, then reduce the heat to low. Cover and cook for 25-30 minutes, or until the chicken is cooked through and tender.
- Serve: Remove the thyme sprigs. Taste and adjust seasoning if necessary. Garnish with chopped parsley before serving.
